The history of Dom Perignon:

Dom Pérignon champagne holds a rich history that dates back to the late 17th century. The name is derived from Dom Pierre Perignon, a French Benedictine monk who lived from 1638 to 1715. Perignon was a cellarer at the Abbey of Hautvillers, where he played a crucial role in revolutionizing the art of winemaking.

Although the popular notion suggests that Perignon invented champagne, he actually made significant contributions to its production. Perignon was known for his meticulous attention to detail and innovative techniques, such as blending different grape varieties, striving for fermentation in the bottle, and perfecting sparkling wines.

His efforts laid the groundwork for the creation of champagne as we know it today. After his death, the champagne house of Moët & Chandon decided to honor Pérignon's legacy by creating a special vintage cuvee, now known as Dom Perignon, in 1921. They envisioned a champagne that embodied excellence, refinement, and the epitome of luxury.

Since its inception, the Dom Perignon brand has become synonymous with prestige and celebration. It has earned a reputation for its exceptional quality and consistency, with each vintage showcasing the unique characteristics of the grapes from that particular year. Dom Perignon remains an esteemed choice for champagne lovers and continues to push boundaries with its limited-edition releases and collaborations.

The Dom Perignon style:

Dom Perignon's wine is renowned for its distinctive style, boasting a unique combination of flavors and aromas that evolve over time. In its youth, the wine exudes smoky and toasty notes with a hint of reduction. As the wine ages, it opens up to reveal an array of scents reminiscent of pear, peach, and tangerine, with the youthful signatures slowly transforming into subtle hints of wheat toast and iodine.

Chef de Cave 1990 – 2008: Richard Geoffroy

Richard Geoffroy, who served as the Chef de Cave from 1990 to 2008, made a lasting impact on the illustrious champagne house. Under his visionary leadership, Dom Perignon's style transformed, emphasizing vintage variation and individuality. Geoffroy's innovative approach led to champagnes that were more expressive, with greater depth, complexity, and structure.

He introduced the concept of "Plenitudes," dividing the ageing process into distinct stages, showcasing the champagne's evolution and character. Geoffroy's meticulous attention to detail and unwavering pursuit of excellence elevated Dom Perignon to an iconic status in the luxury champagne market. Although he stepped down in 2008, his legacy remains, inspiring future winemakers to push boundaries and create exceptional champagnes in the spirit of Dom Perignon.

Chef de Cave 2008 – present: Vincent Chaperon

Vincent Chaperon, the current Chef de Cave since 2008, seamlessly assumed the role after working alongside his predecessor, Richard Geoffroy, for 13 years. This long period of collaboration made Chaperon a natural fit. With his deep understanding of the vineyards and the delicate winemaking process, Chaperon has brought his own unique touch while staying true to the essence of the iconic champagne house. Chaperon's seamless transition ensures a consistency in style and craftsmanship, while also allowing him to bring his own perspectives and creativity to each bottle.
