With a history dating back to 1928, Cavallotto Winery has risen to prominence for producing classically styled Barolos that exemplify the essence of the Piedmont region. Situated in Castiglione Falletto, Cavallotto manages 23 hectares of vineyards, primarily focusing on the noble Nebbiolo grape. The winery is celebrated for its age-worthy Barolos, characterised by their refined tannins and elegant structure.
The Cavallotto family's winemaking journey began with the acquisition of vineyards in Barolo, a region famed for its Nebbiolo grapes. The estate's location in Castiglione Falletto is ideal for this variety, offering well-drained soils and a favourable microclimate that contribute to the depth and complexity of their wines. The family has consistently upheld traditional winemaking methods while embracing innovations that enhance their wines' character and longevity.
Central to Cavallotto’s success is the family-operated Bricco Boschis Cru vineyard. Nestled on a hill parallel to the esteemed Monprivato vineyard, Bricco Boschis is renowned for producing some of the finest Nebbiolo grapes in the region. The vineyard's south-facing slopes and well-drained soils yield grapes with intense colour and robust tannins, creating wines that are both powerful and refined.
Cavallotto’s vineyards are situated in three key crus: Bricco Boschis, Vignolo, and Collaretto. Each site offers unique terroir that influences the character of the wines.
Bricco Boschis: The flagship vineyard, Bricco Boschis, is renowned for its mature vines, some over 60 years old. The vineyard's optimal exposure and soil conditions produce Barolos with exceptional ageing potential, deep fruit flavours, and a distinctive, elegant profile.
Vignolo: Located in a cooler area, Vignolo imparts a freshness and finesse to the Nebbiolo grapes. The cooler climate here ensures vibrant acidity and nuanced aromas, contributing to the wine’s balanced and refined character.
Collaretto: Positioned at a higher elevation, Collaretto benefits from a cooler microclimate that preserves the grapes' natural acidity and aromatic intensity. The wines from this vineyard are known for their elegance and well-structured profile.
Cavallotto practices organic farming and minimal intervention in winemaking, aiming to reflect the true character of their terroir. This commitment to sustainability ensures that each bottle authentically represents the Piedmont region’s unique attributes.
