Saint-Aubin, nestled in the heart of Burgundy, benefits from an exceptional terroir that is ideally suited for Chardonnay. The vineyards are characterized by their limestone-rich soils, which impart a distinct minerality and finesse to the wines. The region's hilly terrain provides excellent drainage and exposure, allowing the grapes to ripen slowly and develop complex flavours. The cool climate of Saint-Aubin further contributes to the freshness and vibrancy of the wines, making them stand out among Burgundy’s offerings.
At Hubert Lamy, winemaking begins in the vineyard with a strong emphasis on sustainable practices. Olivier Lamy employs meticulous viticultural techniques, including high-density planting, to encourage competition among the vines and enhance the quality of the grapes. His winemaking style emphasizes the fresh and mineral side of the wines, using very little new wood. Most of the wines are aged in 600-litre demi-muids rather than the classic 225-litre Burgundy barrels. This approach ensures that the wines maintain a laser-like purity and intensity.

The 2015 Saint-Aubin 1er Cru En Remilly is excellent, offering up a pure and unadorned bouquet of crisp green apples, white flowers and crushed chalk that's classic Lamy. On the palate, the wine is medium to full-bodied, stony and saline, with bright, tangy acids and a pure, mineral finish. Right now, it's tight-knit and reserved, so several years' patience is advised. Drink 2020 - 2030
