This prestigious cuvée is crafted predominantly from 85% Sangioveto (Sangiovese)—Tuscany’s indigenous red variety—alongside 15% Malvasia Nera. The name “I Sodi di San Niccolò” translates to “the dry places of San Niccolò,” referencing the sun-drenched vineyards where the grapes are cultivated. The vines are carefully tended, characterised by loose bunches and naturally low vigour, ensuring optimal fruit quality.

The winemaking process at Castellare di Castellina is a harmonious blend of tradition and modernity. I Sodi di San Niccolò undergoes fermentation in stainless steel, preserving the integrity of the fruit. Following this, the wine is racked into concrete for malolactic fermentation, allowing for a smooth transition and development of complex flavours. The ageing process spans 24 months in French oak barrels, with roughly 50% of these being new. This careful approach to winemaking results in a wine that beautifully balances elegance and structure, showcasing the true potential of its varietals.
