Winemaking Techniques

Vin de Constance Production

Vin de Constance is produced from the Muscat de Frontignan grape, which is known for its aromatic intensity and natural sweetness. After harvesting, the grapes are left to raisin on the vine, concentrating the sugars and flavours. This method, known as "passerillage," is key to the wine's rich, luscious character. The grapes are then gently pressed to extract the juice, which undergoes fermentation in oak barrels. The use of oak barrels for fermentation and ageing adds complexity and structure to the wine. Vin de Constance is aged for up to four years in a combination of new and used oak barrels, which allows the wine to develop its signature flavours of dried fruit, honey, and spice, while retaining a fresh acidity.

Under the guidance of winemaker Matthew Day, Klein Constantia has introduced several innovative techniques to enhance the quality of their wines. For example, the use of foudres (large wooden vats) for ageing has been implemented to add depth and nuance to the wines without overpowering them with oak flavors.
