Few producers capture the raw beauty and inner soul of Ribeira Sacra quite like Adegas Guimaro. High above the Sil and Miño rivers, where terraced vineyards cling to impossibly steep slopes, the estate has become one of the defining voices of this remote Galician region. At the heart of it all is Pedro Rodriguez, a thoughtful yet quietly rebellious winemaker whose family has farmed these dramatic landscapes for generations. His wines carry the imprint of place so clearly that once you taste them, the connection to the land feels almost instinctive.

The name Guimaro means rebel in Galician, a nickname once given to Pedro’s grandfather, and it perfectly reflects both the family’s spirit and Pedro’s approach. When he took the reins in 2001, he didn’t throw tradition aside; he built upon it. He introduced whole cluster fermentations, ageing in large neutral foudres and a gentler hand in extraction. These changes were subtle but transformative, helping the wines gain purity, lift and precision, while still honouring the rustic, soulful style that defines Ribeira Sacra. In many ways, Pedro helped bring the region out of obscurity, proving that its vineyards could produce world-class wines with authenticity and depth.

The vineyards themselves are the heart and muscle of Guimaro. Farmed entirely by hand, these ancient vertiginous terraces are carved into slate, schist and quartz, catching sun by day and cooling winds by night. The combination of poor soils, extreme elevation and sharp diurnal temperature shifts creates conditions that naturally favour vibrant, aromatic Mencía with freshness and tension. Pedro knows each terrace intimately, working them with the instinct that comes from generations of living on the land. His goal is simple: to let each site speak clearly, without noise or interference.

Among the most prized parcels are Meixeman, Capeliños and Pombeiras, three old vine, south-facing plots that represent the pinnacle of the estate. These vineyards are field blends where Mencía shares space with small amounts of Caíño Tinto, Sousón, Brancellao and Merenzao, creating nuance and complexity. Meixeman is graceful and fragrant, the most lifted of the trio. Capeliños is darker, more structured, with an iron streak that runs through the palate. Pombeiras is the most vertical and mineral-driven, a wine shaped by stone and altitude. Together, they show why Adegas Guimaro is regarded as one of Spain’s most compelling small producers, and why collectors and sommeliers continue to champion Pedro’s work.
